THE BEST-EVER CARROT CAKE | |
2 c. flour 2 tsp. baking powder 1 1/2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 2 c. sugar 4 eggs 1 1/4 c. oil 1 c. chopped nuts 2 c. finely grated carrots 1 - 1 1/2 c. drained pineapple 1/2 box powdered sugar 1/2 cube butter 13 oz. pkg. cream cheese 1 tsp. vanilla 3/4 c. raisins Mix eggs, sugar, and oil. Sift dry ingredients together. Add to egg mixture and mix well. Add carrots, pineapple, and nuts and raisins. Bake in two 9-inch greased and floured cake pans for 40 minutes at 350 degrees. Mix powdered sugar, butter, cream cheese, and vanilla to make frosting. Enjoy! |
