COUNTRY CLUB CORNBREAD 
1 c. yellow cornmeal
1/2 c. flour
2 tsp. baking powder
2 tbsp. sugar
1/2 c. vegetable oil
1 c. milk
1 egg, slightly beaten

Sift dry ingredients together. Beat egg in medium bowl. Add oil and milk, and mix well. Add dry ingredients to this and stir to mix. Place 1 tablespoon of butter in each well of muffin pan and heat in oven until melted. Remove pan from oven and fill each cup with batter until melted butter has risen almost to the top of each well. Bake at 450 degrees approximately 20 minutes. This recipe will make a mess of your oven, but is certainly worth it!
