CREAM PUFFS | |
1/2 c. (1 stick) butter 1 c. flour 1/4 tsp. salt 4 eggs 1 c. boiling water To 1 cup boiling water add 1/2 cup butter. Stir with wooden spoon until melted. Add 1 cup flour and salt all at once. Stir vigorously. Cook until dough pulls away from sides of pan and forms a ball around spoon. Remove from heat and cool slightly. Add 4 eggs one at a time, beating smooth after each. Drop dough by heaping tablespoonfuls 3 inches apart on greased cookie sheet. Bake in hot oven 450 degrees 15 minutes then slow 325 degrees for 25 minutes. For crispier puffs, turn oven off after baking. Cut tops from puffs and let stay in oven 15 minutes to dry. Fill centers with favorite pudding and drizzle chocolate frosting over top. Or serve with a salad or creamed dish inside. Makes 8 large. |
