CHEFS SPINACH SALAD GOURMET 
2 c. or more of raw spinach
1/3 c. assorted cheeses
1 scallion, sliced
Vinegar or lemon dressing
4 raw mushrooms, sliced
2 thin slices boiled ham, diced
1 tomato, cut into eights
Garlic salt and pepper to taste

Toss all ingredients - serve immediately. Yield: 1 serving.
