FISH FLORENTINE WITH LIGHT
CHEESE FONDUE SAUCE
 
Serves 4.

4 (4 to 6 oz.) pollock fillets
Juice of 1 lemon
Salt and pepper
1 bay leaf

Arrange fish in a single layer in a non-metal, 2 quart square or oblong casserole dish, with thickest parts or larger pieces toward the outside. Add lemon juice, salt and pepper and bay leaf. Cover with microwave-safe plastic wrap. Turn back corner of wrap to allow excess steam to escape. Cook on high four to five minutes. Remove from microwave and let stand covered two to three minutes to complete cooking. Drain cooking liquid and reserve 2 tablespoons liquid to use in cheese sauce. Prepare cheese sauce and Tangy Spinach.

Since microwave ovens vary in power, you may need to adjust your cooking time.
