NORWEGIAN APPLE PIE 
1 1/2 c. sugar
1 c. flour
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. vanilla
2 eggs
2 c. diced apples
1/2 c. chopped nuts, optional

Mix all ingredients together until apples are well coated with batter. Pour into greased and floured pie pan. Bake at 325-350 degrees approximately 1 hour.

Serve warm or cover and keep a day. Good with whipped cream or ice cream.
