“BISCUITS AND SAUSAGE GRAVY” IS IN:

BISCUITS AND SAUSAGE GRAVY 
1 can Pillsbury refrigerator biscuits
3/4 lb. bulk sausage
1/2 cup (1 stick) butter
1/2 tsp. black ground pepper (or to taste)
1/2 tsp. cayenne pepper
1 cup flour (or less for thinner gravy)
4 cups milk

Bake biscuits according to package. Fry sausage into small pieces. Melt butter in a separate skillet. Add black pepper and cayenne, stir. Add flour by tablespoons until thick. Whisk in milk. Whisk until smooth and hot. Add sausage, stir. Put sausage gravy on open-face biscuits.

Don't buy sausage in a plastic roll, buy ground from a butcher or a quality supermarket. Much easier to make small pieces

Been making sausage gravy for years. For smaller bits, just tear the sausage into the size you want as you put it in the heated skillet. Like others here, I prefer to use a whole pound too. I also use 4 tbsp. of cornstarch instead of flour for nicer consistency.

Just a thought. They make sausage crumbles if it becomes too hard to break up the pieces.

For smaller pieces, use hard plastic or wooden spatula and chop like crazy for the whole time, it could have been the type of sausage you used the first time, it could of had less connective fibers making it easier to break apart.

how can I get the sausage to break up into very small pieces the 1st time I made the recipe it fried up in small pieces now it will only break down into maybe grape size pieces - it is very good--need smaller pieces for a handicap person
