GREAT SOUTHERN SAUSAGE GRAVY AND
BISCUITS (SOS)
 
1 lb. ground pork sausage (mild, medium or hot)
1 pkg. refrigerator biscuits (or make your own if you're not lazy like me)

GRAVY:

1 tbsp. flour (per person)
1 tbsp. butter (per person)
3/4 cup of milk (per person)
1/4 tsp. salt (per person)
dash of pepper (per person according to taste)
dash of cayenne pepper (optional - I like it hot)
dash of crushed red pepper (optional - see above)

Start by browning the sausage in a frying pan.

Bake biscuits.

Add the flour and butter to a saucepan. Mix and melt together flour and butter over medium to medium high heat.

Once melted add salt and pepper. Continue medium/medium high heat - then add the milk all at once.

Stir the mixture constantly (the more you stir the better the sauce will come out). Bring the mixture to a slow boil, cook and stir for a couple of minutes then add the cooked ground sausage along with the juices from the pan (makes the gravy much better).

Sauce will thicken when it cools.

For a nice kick you can stir in either cayenne or crushed red pepper. Pour mixture over biscuits. Everyone usually prefers the biscuits broken up to bite size pieces. Usually 1 to 2 biscuits are fine per person.
