CALDO DE QUESO (POTATO CHEESE
SOUP)
 
1 tbsp. butter or oil
1 lg. onion
2 tbsp. cilantro, chopped
1 sm. garlic
4 potatoes
1/2 c. green chilies
1/2-1 c. yellow cheese (chunks)

Saute chopped onion in oil or butter. Add 1 quart of water and potatoes (cut in large pieces) and bring to a boil until potatoes are halfway cooked. Then add cheese and simmer for about 15-20 minutes. Salt and pepper to your own taste.
