EASY CHOCOLATE MOUSSE PIE 
Graham cracker crust (see below)
1 (8 oz.) pkg. cream cheese, softened
1/2 cup Hershey's cocoa
1 cup confectioners' sugar
1 1/2 tsp. vanilla
2 cups heavy or whipped cream, divided

Prepare graham cracker crust, set aside. Beat cream cheese and cocoa in large bowl until fluffy and well blended. Gradually add confectioners' sugar; blend well. Stir in vanilla, whipped cream until stiff; fold into cheese mixture. Pour into cooled crust; chill until firm.

GRAHAM CRACKER CRUST:

1 1/2 cups graham cracker crumbs
3 tbsp. sugar
1/2 cup (1 stick) butter, melted

Combine graham cracker crumbs, melted butter and sugar in small bowl. Press mixture firmly onto bottom and up sides of 9-inch pie pan. Bake at 350°F for 10 minutes. Cool.

FYI: In my version, 1/2 cup of the cream goes into the chocolate mixture, and you whip the remainder of the cream (1.5 cups) to then fold in after. See instructions below.

In large bowl, combine cream cheese, 1/2 cup heavy cream, and cocoa. Beat well until smooth and fluffy. Add powdered sugar and vanilla and beat until smooth.

In medium bowl, beat heavy cream until stiff peaks form; fold into chocolate cream cheese mixture.
