HEALTHY TATER TOT CASSEROLE 
Most tater tot recipes call for regular soup, ground beef and tons of cheese... this recipe eliminates large amounts of fat but still has great flavor!

1 lb. ground turkey
1 (1 lb.) bag mixed vegetables
1 (10 oz.) can cream of mushroom soup (reduced fat or Healthy Request)
1 (2 lb.) bag frozen tater tots
salt and pepper, to taste

Preheat over to 425°F. Thaw ground turkey (if needed) and brown in a large pan. Season with salt and pepper, as desired.

Pour mixed vegetables and cream of mushroom soup into large mixing bowl. Add turkey and stir until combined. Pour mixture into a greased 9x13-inch baking dish. Take bag of tater tots and align tots on top of mixture.

Bake at 425°F for 40 to 50 minutes or until tater tots are crispy.
