HOT CHICKEN SALAD 
1 (2 1/2 - 3 lb.) chicken, cooked & cubed
1 1/2 c. chicken broth
2 c. chopped celery
4 tsp. minced onion
1 tbsp. lemon juice
2 cans cream of chicken soup
1 c. mayonnaise
1/2 tsp. salt
1 c. herb seasoned stuffing mix
1 c. crushed potato chips

Mix all ingredients except stuffing mix and potato chips. Place in greased 9"x13" greased baking dish. Mix chips and stuffing and sprinkle on top just before baking. Can be made ahead of time and then put topping on just before baking. Bake at 350 degrees for 1 1/4 hours. Serves 12. Good over rice.
