ZUCCHINI CASSEROLE 
2 c. boiling water
4 c. zucchini
2 eggs
1 c. mayonnaise
1 chopped onion
1/2 c. chopped green pepper
1 c. grated Parmesan cheese
Salt and pepper
1 tbsp. butter
2 tbsp. bread crumbs

Cook zucchini until tender in water; drain. Beat eggs in large bowl. Stir in next 5 ingredients. Add zucchini. Put in greased 1 1/2 quart baking dish. Dot with butter. Sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes.
