“CHARLES' PANCAKES FROM SCRATCH” IS IN:

CHARLES' PANCAKES FROM SCRATCH 
1 egg
1 cup low fat milk
1/2 tsp. vanilla extract
1 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. salt

Beat egg, milk and vanilla together. Combine remaining ingredients and stir into the batter, just until somewhat smooth, but slightly lumpy. Don't over mix.

To make pancakes; pour a little batter onto a hot griddle. Leave at least 2-inches of space between pancakes. Allow them to cook until the tops of pancakes are bubbled, then turn with spatula. Cook just until the underside is lightly browned.

Makes 10 (4-inch) pancakes. Recipe may be doubled. Unused batter may be stored in the refrigerator. Thin with a little cold water if batter becomes too thick.

I made these pancakes this morning doubling the recipe. I used 2 cups goat's milk, 1 teaspoon cinnamon, 1/2 cup applesauce and 1/2 cup quick oats. The batter mixed up well in the stand mixer with buttermilk as needed. My husband Chris and I ate pancakes with fresh strawberries, butter, and jam. They were delicious! We have 3 cups of pancake batter remaining in refrigerator for another day.

For the ease and low number of ingredients, this was the best pancake recipe, much better than mix. Added 1 tbsp. of sugar for the hubby. Easy and quick. Like the other comments, no greasing of pan necessary. Thanks Charles for sharing. This one is a keeper!

Ran out of pancake mix and googled 'pancakes from scratch.' These were great..nice and fluffy. I held back on a little of the milk-egg mixture so they wouldn't be quite as thin. Terrific! Kids loved them too!

I had 2 eggs so I had to double the recipe. Made one pancake lasted all day. Next time I'll make it when I only have 1 egg. And I'm only 77 & 1/2. I hope to make them when I'm 125. THANKS CHARLIE

These pancakes were so good, i decided to triple the recipe!! My parents, sister and my friends all love them! Added some sugar and banana in it.
Didnt have eggs though, so i substituted with applesauce. Either way, they tasted great!

Very delicious! I've been wanting to have pancakes for breakfast forever now, but we've been out of Bisquick. Finally decided to look up a recipe for making pancakes from scratch, and this one is perfect! Looks like I wont have to worry about getting Bisquick anymore.
