OATMEAL CAKE 
CAKE:

1 1/4 c. boiling water
1 c. minute oatmeal
1 stick butter
1 c. packed brown sugar
1 c. sugar
1 1/3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
Pinch of salt
2 eggs

FROSTING:

9 tbsp. butter
1/4 c. evaporated milk
1 c. packed brown sugar
1 sm. can coconut
1 c. chopped nuts
1 tsp. vanilla

Pour boiling water over oatmeal and butter. Let this stand for 20 minutes. Add brown sugar, sugar, eggs, flour, baking soda, salt, cinnamon, nutmeg. Mix well and pour into a greased and floured 9"x13" pan. Bake for 30 minutes at 350 degrees.

Melt 9 tablespoons butter over medium heat. Add milk, brown sugar, coconut, nuts and vanilla. Cook 1 minute. After cake is baked, immediately spread frosting mixture onto cooked cake and broil in oven for 1 minute until the frosting bubbles. Cool and enjoy.
