ROSY RHUBARB SQUARES 
CRUST:

1 c. flour
2 tbsp. sugar
1/2 tsp. salt
2 tsp. baking powder
1/4 c. shortening
1/4 c. milk
1 egg

RHUBARB:

3 c. rhubarb, chopped
1 (3 oz.) pkg. strawberry gelatin

TOPPING:

3/4 c. sugar
1/2 c. flour
1/4 c. butter

In a bowl mix flour, sugar, salt and baking powder for the crust. Using a fork, mix in shortening until pieces are no bigger than a pea. Add egg and milk, stirring until mixture is smooth. Grease 9 x 9 inch baking pan. Spread crust mixture over bottom. Mix rhubarb and gelatin. Spread fruit over crust.

Mix topping of sugar, flour and butter until crumbly, spread over rhubarb. Bake at 375 degrees for 35 minutes. Can be served warm with milk or eat cold. Serves 9.
