2 lb. ground beef 1 lg. can cream style corn 1 lg. onion, chopped 1 lg. bell pepper, chopped 2 lg. cans tomatoes 1 med. jar stuffed olives 2 tbsp. chili pepper 1 tsp. salt and pepper 1 lg. pkg. med. wide noodles, cook as directed 1 lb. sharp Cheddar cheese, grated Cook meat in large pot until tender, add onions and peppers. Cook until tender. Add corn, tomatoes, olives and chili pepper, salt and pepper. Simmer a few minutes. Place some cheese in bottom of large casserole dish. Combine noodles and meat mixture on top of cheese in the dish. Cover top with remaining cheese. Bake for 30-40 minutes in 325 degree oven. Mushrooms stems and pieces may be added. This makes a large amount, so can be divided into 2 casserole dishes, using one now and freeze other for later. Let thaw and add top cheese before baking. |
