BANANA - NUT CAKE 
2/3 c. shortening
1 2/3 c. sugar
1 tsp. baking soda
1 1/4 c. (about 3) sieved bananas
2/3 c. buttermilk
2/3 c. chopped nuts
2 1/2 c. sifted cake flour
1 1/4 tsp. baking powder
1 tsp. salt
1/2 c. (2 lg.) eggs

Oven, 350 degrees.

Stir shortening just to soften. Sift in dry ingredients. Add bananas and half the buttermilk; mix until all flour is dampened. Then beat vigorously 2 minutes. Add remaining buttermilk and eggs; beat 2 minutes longer. Fold in nuts. Bake in 2 paper-lined 9 x 1 1/2 inch round pans in moderate oven (350 degrees) for 30 to 35 minutes.
