BANANA NUT COFFEE CAKE | |
1/4 c. shortening, melted 1/4 c. milk 1 egg 1/2 c. mashed ripe banana (about 1) 1/2 c. brown sugar 1 c. flour 1/2 c. chopped nuts 3/4 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda In medium bowl, combine shortening, milk, egg, banana and sugar; add flour, nuts, baking powder, salt and baking soda, stirring only until flour is moistened. Pour into greased 8" or 9" round baking dish. Set power at medium for 9 to 10 minutes. Let stand covered, 10 minutes. Store, covered until ready to serve. Yield: 18 servings. |
