FROSTED BANANA CAKE 
3 large or 4 to 5 small bananas
1/2 c. shortening
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
2 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. baking soda
1/2 cup milk
1/4 tsp. vinegar

Beat bananas with electric mixer. Add shortening and sugar; mix well. Add eggs and vanilla. Combine baking soda with milk and then add to banana mixture. Add remaining ingredients; mix well. Pour into greased and floured 9x13-inch pan.

Bake 350°F for 30 to 35 minutes.

Frosting:

1/4 c. (1/2 stick) butter
2 c. powdered sugar
1 tsp. vanilla
3 tsp. cooled coffee (optional)

Mix all ingredients and spread over cake. Other flavorings may be substituted.
