BANANA CAKE 
3/4 c. shortening
2 c. sugar
3 eggs
3 bananas, ripe
1 c. water
1/2 c. wine
1 tsp. vanilla
3 c. flour
1/4 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
Chocolate sprinkles, optional

Cream shortening and sugar in mixer. Add eggs. In blender combine bananas, water and wine. Add alternately to above mixture flour sifted with baking powder, salt and baking soda. Add vanilla. Bake in 9 x 13 inch pan or tube pan, 350 degrees for 25 minutes. Frost with Mocha Icing.

MOCHA ICING:

1 1/2 c. confectioners' sugar
1/2 c. shortening
Either 2 sq. chocolate or 1/4 c. cocoa
Pinch salt
1/2 tsp. vanilla
Egg or egg yolk
3 tbsp. black coffee, liquid

Mix ingredients well and spread on banana cake.
