RHUBARB SAUCE WITH PINEAPPLE | |
1 1/4 lb. rhubarb 1 1/4 c. water 1 c. sugar 1/2 c. crushed pineapple, drained 2 tbsp. quick cooking tapioca Trim ends off rhubarb, wash stalks, chop coarsely. In 2 quart pan, combine rhubarb, water, sugar, pineapple and tapioca. Let stand 5 minutes. Heat mixture to boiling over medium heat. Reduce heat and simmer about 5 minutes. Cool. Refrigerate in containers until ready to use. |
