RHUBARB SAUCE WITH PINEAPPLE 
1 1/4 lb. rhubarb
1 1/4 c. water
1 c. sugar
1/2 c. crushed pineapple, drained
2 tbsp. quick cooking tapioca

Trim ends off rhubarb, wash stalks, chop coarsely. In 2 quart pan, combine rhubarb, water, sugar, pineapple and tapioca. Let stand 5 minutes. Heat mixture to boiling over medium heat. Reduce heat and simmer about 5 minutes. Cool. Refrigerate in containers until ready to use.

I found this recipe years ago in a magazine, maybe Woman's Day and loved it! I use it every Spring. I am not sure but I thought the original recipe called for more sugar and I used a little less, probably 1 cup. I added the drained juice of the pineapple replacing an equal amount of water.
