IRISH SODA BREAD | |
4 c. unsifted flour 1 tsp. salt 3 tbsp. baking powder 1 tsp. baking soda 1/4 c. sugar 6 tbsp. butter 1 egg 1 3/4 c. buttermilk 2 c. raisins or currents In a large bowl (or food processor) mix together dry ingredients. Add butter and cut with pastry blender or fork until mixture is crumbly. Beat the egg lightly and mix with the buttermilk. Add to the dry ingredients and stir until blended. Add raisins and mix thoroughly. Divide dough in half and place in two 8 inch cake pans and spread evenly. Press down with a sharp knife to cut crosses on top of the loaves. Bake at 375 degrees for 35-40 minutes. Makes two medium size loaves. |
