“VEGGIE PIE” IS IN:

VEGGIE PIE 
1 small onion, chopped
1 stalk celery, diced
1 pkg. frozen vegetables (broccoli, red pepper, cauliflower, etc.)
1 1/2 cups shredded cheddar cheese
3/4 cup Bisquick baking mix
1 1/2 cups milk
3 eggs
1 tsp. salt
1/4 tsp. pepper

Preheat oven to 375°F.

Place frozen vegetables in a greased round casserole dish. Pat dry with paper towels. Add onion, celery and cheese.

In a medium bowl, beat eggs, milk, Bisquick, salt and pepper. Beat until smooth. Pour over vegetable mixture.

Bake at 375°F for 35 to 40 minutes or until a toothpick inserted into the halfway point comes out clean.
