CHEESE COFFEE CAKE | |
DOUGH: 2/3 c. milk, scalded & cooled to lukewarm 1 tbsp. sugar 1 oz. cake or 1 pkg. dry yeast 1 c. butter 2 1/2 c. flour 3 egg yolks, beaten Dissolve sugar and yeast in lukewarm milk and set aside. Mix flour and butter like for pie crust. Add yeast and milk mixture to egg yolks, pour in flour and mix well. Divide the dough into 2 parts. Roll 1 part for the bottom of cookie sheet, 10"x14". Spread the filling, cover with the other part of dough and let rise 1 hour. Bake at 350 degrees for 30 to 35 minutes. Before putting in oven spread with melted butter and sprinkle with streusel topping after baking, when cool dribble with frosting. FILLING: 2 lbs. cream cheese 2 eggs, separated 2 c. sugar 2 tsp. vanilla Beat cheese, egg yolks, sugar and vanilla until light and fluffy. PINEAPPLE SLICES: Use the same dough as for cheese. Use 2 cans of pineapple pie filling. BUTTER STREUSEL TOPPING: 3/4 of a stick of butter 3/4 c. sugar Drop of vanilla Mix into paste. Add little flour until mixture becomes dry. |
