ASPARAGUS SAUTE 
1 lb. bunch asparagus
salt and pepper
olive oil for frying

Trim tough ends from asparagus and break into one inch pieces. Soak in cold water with a 1/2 teaspoon of salt to remove sand and grit from tips. Rinse thoroughly and drain. Place asparagus in a heavy, covered fry pan lightly coated with olive oil. Cover and saute slowly on medium low heat until tender.
