TUNA CROQUETTES 
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
Dash pepper
1/2 c. milk
3 tbsp. grated onion
1 can tuna, drained
2 c. cracker crumbs
4 eggs, slightly beaten

Melt butter; remove from heat. Stir in flour, salt and pepper; mix well. Add milk; stir constantly. Cook until thick, stirring constantly; cool. Shape into oblong croquettes, using 1 tablespoon tuna mixture each. Roll in cracker crumbs; dip in eggs. Roll in crackers again. Place on tray; cover and chill thoroughly. Fry at 375 degrees until brown, drain on towels. Serve hot. 6 servings.
