FRENCH FRIED ZUCCHINI 
PLACE IN BOWL AND MIX WELL:

1 1/2 c. flour
1 tsp. salt
1 tbsp. melted butter or cooking oil
2 lg. egg yolks, beaten

Add gradually 3/4 cup flat beer, stirring constantly. Allow batter to rest uncovered and refrigerate 3 to 12 hours. Just before using, add 2 stiffly beaten egg whites.

Have 2 cups of zucchini cut like French fries. Be sure zucchini is real dry. Dip in batter. Fry as you do French fries. Serve with mayonnaise or lemon wedges.
