FRIED ZUCCHINI PARMESAN 
1 med. zucchini, sliced 1/2 inch thick
1 sm. clove garlic, chopped
3 tbsp. hot cooking oil
Salt & pepper
1 tbsp. parsley, chopped
1 tbsp. Parmesan cheese

Fry zucchini and garlic in hot oil until slightly brown. Season and serve. Sprinkle with parsley and Parmesan cheese.
