FRIED ZUCCHINI HOT CAKES | |
1 1/2 c. grated, unpeeled zucchini 2 tbsp. finely grated onion 1/4 c. Parmesan cheese 1/4 c. flour 2 eggs, beaten 2 tsp. parsley flakes 1/4 tsp. oregano Salt & pepper to taste Melted shortening Dry grated zucchini between paper towels. Combine remaining ingredients and zucchini; mix well. Melt shortening in a skillet until it sizzles. Spoon zucchini batter (about 2 tablespoons) into hot oil or shortening; cook batter over medium heat until brown on both sides. Serve zucchini cakes plain, or with grated cheese, tomato sauce or sour cream and chives. |
