FETTUCCINE WITH FRIED ZUCCHINI 
1 1/2 lbs. zucchini, preferably sm.
10 fresh basil leaves
6 tbsp. butter
1/2 c. flour
Vegetable oil to come 1/4 inch in frying pan
3 peeled garlic cloves
1 lb. fettuccine
1/2 c. grated Parmesan cheese

1. Soak the zucchini for 10 minutes in cold water. Scrub with hands.

2. Cut off and discard the ends, then cut the zucchini into sticks 2 1/2 inches long not more than 1/4 inch thick.

3. Put zucchini sticks in a colander and sprinkle with salt. Toss and let the zucchini sit for two hours.

4. Wash the zucchini and pat dry.

5. Boil water and ready it for fettuccine.

6. Rinse and cut up basil leaves. Melt butter.

7. Put the zucchini in a dry colander and dust the zucchini with flour, coating evenly.

8. Put the oil and garlic in frying pan and turn heat to high. Put zucchini sticks in frying pan. When garlic turns brown remove it. Brown zucchini on all sides and remove to a dry paper towel.

9. Cook fettuccine and transfer to a warm platter.

10. Pour melted butter over it, add the fried zucchini, the basil leaves and the grated cheese. Toss thoroughly.
