ZUCCHINI BREAD 
1 1/2 c. flour
1 c. whole wheat flour
2 c. packed brown sugar
2 c. finely shredded zucchini
3/4 c. oil
1/2 c. sunflower nuts or 2 tbsp. shredded lemon peel
3 eggs
1 tsp. vanilla
2 tsp. cinnamon
1 tsp. salt
1 c. pecans
1/2 tsp. baking powder
1 tsp. baking soda

In bowl stir flour, cinnamon, salt, baking powder, soda. In large bowl beat eggs until well blended with brown sugar and zucchini. Add oil, lemon peel and vanilla. Gently fold in nuts.
