SHARON'S ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. vegetable oil
1 tbsp. vanilla
2 c. grated zucchini, peeled
1 c. chopped nuts
2 c. flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. lemon flavor or grated rind

Beat eggs until light and frothy. Add sugar, oil, and vanilla; mix well. Add zucchini, stirring thoroughly. In a separate bowl sift flour and other dry ingredients. Add dry ingredients to zucchini mixture, stirring until smooth. Add nuts and lemon last. Bake in two greased loaf pans about an hour at 350 degrees.
