SPICED ZUCCHINI BREAD 
3 c. all purpose flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
1/2 tsp. baking powder
3/4 c. walnuts
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
2 c. shredded zucchini
1 (8 oz.) can crushed pineapple

GLAZE:

1 c. powdered sugar
Lemon juice or milk

Combine dry ingredients; add walnuts and set aside. Beat egg lightly; add sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients all at once, stirring only to moisten all the flour. Spoon into 2 well greased and floured 9 x 5 x 3 inch loaf pans. Bake at 350 degrees for 1 hour. Cool in pans 10 minutes; remove to wire racks. Combine powdered sugar with enough lemon juice or milk to spread easily. Glaze the hot loaves. Bake 45 minutes if made into 4 little loaves.
