CHICKEN AND APPLES 
Chicken and apples are placed in foil, for baking and steaming.

1 bunch Swiss chard (about 1 1/2 lbs.), sliced
4 boneless, skinless chicken breasts (about 1 lb.)
2 red apples, sliced into rings
8 oz. button mushrooms
4 carrots, sliced
4 shallots, sliced
1/2 c. golden raisins
1/2 c. pecans, chopped
1 tsp. each thyme, ginger, salt and pepper
1/2 c. apple juice

Preheat oven to 350 degrees. Cut 4 large pieces foil. On one piece of foil place chicken and evenly divide Swiss chard and place on one side of foil. Lay chicken and 1/4 apple rings. Sprinkle with 1/4 of the next 9 ingredients. Drizzle with juice. Fold foil over and close top to hold juice in foil. Bake 30-35 minutes.
