GRANDMA'S MUSHROOM LEMON FISH
FILLETS
 
1/4 c. butter
2 c. sliced mushrooms
1/4 c. sliced onion
2 tbsp. flour
1 tsp. salt
1 tsp. parsley flakes
1 tsp. grated lemon peel
1/8 tsp. pepper
1 c. milk
2 lb. fish fillets, thawed

Place butter, mushrooms and onion in 2 quart (12 x 7) glass baking dish. Microwave 2 to 3 minutes or until onion is partly cooked. Blend in flour, salt, parsley, lemon peel and pepper. Stir in milk, mix well; cover.

Microwave on high 4 to 5 minutes until mixture bubbles. Stir well. Arrange fish with thick edges towards outside of dish. Spoon sauce over fillets. Cover.

Microwave for 11 to 12 minutes or until fish flakes easily. Let stand, covered, 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
