VIKKI'S HOMEMADE SCALLOPED POTATOES | |
6 medium potatoes, pared and thinly sliced (6 cups) 2 tbsp. chopped onion Make white sauce (see recipe below). Place half the potatoes in a greased 2-quart casserole; cover with half the onion and half the sauce. Repeat layers. Cover and bake at 350°F about 1 hour. Uncover and bake 30 minutes longer. Variation: You can also add diced ham or cheese to this recipe. Serves 4 to 6. WHITE SAUCE: 3 tbsp. butter 2 tbsp. all-purpose flour 1 1/2 tsp. salt 1/8 tsp. pepper 3 cups milk Melt butter in a saucepan over low heat. Blend in flour, salt and pepper. Add milk all at once. Cook quickly, stirring constantly, till mixture thickens and bubbles. Remove sauce from heat when it bubbles. Submitted by: Country Cooking Vikki |
