LITTLE LEMON SANDWICH COOKIES 
1 pkg. lemon cake mix
2 eggs
1/3 cup canola oil
1/2 cup confectioners' sugar
1 (16 oz.) tub prepared cream cheese frosting

Preheat oven to 350°F.

Mix together the cake mix, eggs, and canola oil in a large bowl until cookie dough is formed.

Place the confectioners' sugar into a small bowl. Drop 1 tablespoon of the cookie dough into the confectioners' sugar. Roll the ball of dough in the confectioners' sugar and then place it on a baking sheet that has been prepared with non-stick cooking spray (Pam). Place 12 balls of dough on each baking sheet.

Bake at 350°F for 8 to 12 minutes until cookies turn a light golden-brown on the edges. Remove cookies from the oven. Using a spatula, remove cookies from baking sheet and place them on a cooling rack to cool.

Once they have completely cooled, spread a layer of frosting in between two cookies to make a sandwich cookie. Repeat this process with all the other cookies until you have either run out of the lemon cookies or have run out of the frosting, or both.
