MOM'S CUCUMBER SALAD 
Easy and very yummy! Hardly any calories. Sometimes I add goat cheese or feta as well.

1 large or two medium cucumbers
1 medium lemon
2 Roma tomatoes
1/2 can large black olives (pitted)
1/4 red onion, sliced into thin strips

Peel and cut the cucumber into desired size. I like mine cut lengthwise in quarters and then chopped up. Slice tomatoes into eighths. Leave olives whole. Add sliced onions and all ingredients into a bowl. Squeeze lemon juice on top, add salt to taste. Enjoy.
