CUCUMBER SALAD 
3 cucumbers, peeled and chopped
2 Roma tomatoes, (or any ripe tomato) chopped
1/2 red onion, chopped
black pitted olives
1 - 2 cups Italian dressing
pinch of salt and pepper (or to taste)
Parmesan cheese from shaker (to taste)

Clean and peel cucumbers and chop. Chop tomatoes and onion, and add pitted black olives. Add dressing; season to taste with salt and pepper. Refrigerate for 1 hour. Top with Parmesan cheese.
