POLYNESIAN CHICKEN SALAD | |
1 can pineapple chunks, drained 2 1/2 c. cooked chicken, diced 3/4 c. celery, diced Combine in large bowl. Cover and chill at least 1 hour. In another bowl, mix dressing: 2 tbsp. chutney (Maj Earl Grey), chopped 1 tsp. curry powder Cover and chill at least 1 hour. Just before serving, drain any liquid from chicken mixture. Add: 1/3 c. salted peanuts 1/2 c. flaked coconut 1 can Mandarin oranges, drained Mix with dressing until well coated. |
