POLYNESIAN CHICKEN SALAD 
2 c. cooked chicken, cut into sm. pieces
1 1/2 c. diced celery
1 1/2 c. diced canned pineapple, or white seedless grapes (or both)
1/4 c. shredded carrot, (not grated)
1/2 c. toasted almond halves
1/2 c. mayonnaise
1/4 c. sour cream
1 tsp. curry powder
1 tsp. fresh lemon juice
1/2 tsp. salt, salad greens and parsley

Combine chicken, celery, pineapple and/or grapes, carrots, and almonds. Blend mayonnaise with sour cream and seasonings; pour over chicken and toss lightly. Chill thoroughly; arrange on greens and garnish with minced parsley, if desired. Yield: 6 servings.
