POLYNESIAN CHICKEN SALAD 
2 c. cooked chicken, cut into sm. pieces
1 1/2 c. diced celery
1 1/2 c. diced canned pineapple or white seedless grapes
1/4 c. shredded carrot, not grated
1/2 c. toasted almond halves
1/2 c. mayonnaise
1/4 c. sour cream
1/2 tsp. curry powder
1 tsp. fresh lemon juice
1/2 tsp. salt

Combine chicken, celery, pineapple or grapes, carrots and almonds. Blend mayonnaise with sour cream and seasoning. Pour over chicken and toss lightly. Chill thoroughly. Arrange on salad greens and garnish with minced parsley.
