PINEAPPLE BREAD PUDDING 
1/4 c. butter
1 (3 to 4 oz.) pkg. instant vanilla pudding
1 tsp. cinnamon
3 eggs, slightly beaten
3 c. milk
1 (8 1/4 oz.) can crushed pineapple, undrained
1/2 c. flaked coconut
8 slices white, French or raisin bread, cut into 1/2" cubes
1 tsp. white sugar and cinnamon, mixed

Melt butter in a 2-quart measuring cup. Add pudding mix, cinnamon, eggs, milk, undrained pineapple and coconut. Blend thoroughly. Fold in bread crumbs. Pour mixture into a 2-quart microwaveable baking dish. Sprinkle with cinnamon and sugar mixture. Cook 30 to 32 minutes at power control #8. Serve warm.

Since microwave ovens vary in power, you may need to adjust your cooking time.
