PINEAPPLE UPSIDE DOWN CAKE 
1 c. white sugar
1/2 c. shortening
2 eggs, well beaten
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 (#2) can pineapple slices

Cream sugar and shortening. Add beaten eggs. Sift together flour, salt and baking powder. Add to creamed mixture alternately with 3/4 cup syrup from pineapple; mix well.

Simmer together in a 9" heavy skillet 4 tablespoons butter and 1 cup brown sugar. Arrange pineapple slices on top. Place a maraschino cherry in center of each slice. Pour batter over all. Bake at 350 degrees for 50 minutes. Turn out on serving platter at once.
