PINEAPPLE - CHERRY CRUNCH 
1 c. crushed pineapple
2 1/2 c. sour cherries (with juice)
1 c. sugar
3 tbsp. tapioca
1 tbsp. lemon juice

CRUMB MIXTURE:

1 c. flour
1/4 tsp. baking soda
1 c. quick oats
2/3 c. brown sugar
1/2 c. melted butter

Cook pineapple, cherries, sugar, tapioca and lemon juice in a saucepan about 10 minutes, until thick and clear. Cool slightly.

Mix flour, soda, oats, brown sugar and butter. Press half the crumb mixture in bottom of 8 x 8 inch pan. Pour pineapple-cherry mix over this, then add remaining crumb mix over the top. Bake at 400 degrees for 20 minutes.
