BROCCOLI-CARROT SALAD 
SALAD:

1 1/2 c. broccoli flowerets, blanched
1 med. red apple, cut in chunks
1 med. carrot, grated
1/4 c. raisins
Lettuce leaves

DRESSING:

1/2 c. reduced calorie mayonnaise
2 tbsp. red wine vinegar
1/4 tsp. salt
1/8 tsp. pepper

In salad bowl combine salad ingredients. In small bowl with fork, mix dressing ingredients. Pour over salad. Toss until coated. Line serving dish with lettuce leaves. Spoon salad on top.
