FROZEN BANANA ROLLS | |
Several ripe (but not overripe) bananas, peeled & cut in half or whole if small 1 c. old fashioned peanut butter 1/3 c. honey 1/2 c. dates blended with 1/2 c. water or chopped & cooked in water to soften & mash Approx. 1 c. dry cereal crumbs (Grape-Nuts, Shredded Wheat or Granola) Place peanut butter in bowl. Stir in honey and date mixture. Gradually stir in crumbs adding only the amount needed to make a pliable dough that can be handled. Pinch off a ball of dough and flatten it with your hands into a pancake. Wrap around the banana and roll wrapped banana between hands to distribute coating evenly. May roll in coconut if desired. Place on cookie sheet and freeze. To serve, slice 1/4" slices while frozen and serve immediately. These are best eaten frozen. |
