ORANGE CARROT AND CREAM CHEESE
MOLD
 
3 oz. cream cheese, room temperature
3 oz. pkg. orange Jello
1 c. hot water
1/4 c. grated carrots
8 oz. can crushed pineapple
1 c. liquid with juice from pineapple
1 pt. whipped cream

Put cheese in bowl. Dump Jello atop. Add hot water. Mix with mixer until blended. Add carrots, pineapple and 1 cup liquid. Beat cream until stiff. Fold into orange Jello mixture and pour into mold. Refrigerate until set or overnight. Unmold before serving.
