CARROT CAKE WITH CREAM CHEESE FROSTING | |
2 c. sugar 2 c. all-purpose flour 2 tsp. baking soda 1 tsp. salt 3 tsp. cinnamon 1 1/2 c. vegetable oil 4 eggs 3 c. grated carrots 1 c. chopped nuts 1 tsp. vanilla Mix together sugar, flour, baking soda, salt, and cinnamon. Stir in oil. Add eggs, 1 at a time, mixing well after each addition. Add carrots, nuts, and vanilla. Mix thoroughly. Pour into greased and floured 9x13-inch pan. Bake at 350°F for 50 to 60 minutes. Cool in pan. Spread with Cream Cheese Frosting prepared as follows: CREAM CHEESE FROSTING: 1/2 c. (1 stick) melted butter 1 (8 oz.) pkg. cream cheese, softened 1 (1 lb.) box confectioners' sugar Combine butter, cheese and vanilla, mixing well. Gradually add sugar, beating until smooth. Spread on cooled cake. |
